BBQ Shrimp & Grits

Ingredients

  • 1 ½ lbs shrimp
  • ½ cup pancetta
  • 1 cup green onions, chopped
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 Tbsp bourbon
  • ~½ cup BBQ sauce
  • tabasco
  • Cajun seasoning
  • Worcestershire sauce
     
  • 4 cups chicken broth
  • 1 garlic clove, minced
  • 1 cup old fashioned grits
  • 4 oz sharp cheddar, grated
  • 2 Tbsp butter
  • 2 Tbsp cream
  • salt and pepper

 

Recipe

  • Grits: Bring broth to boil
  • Add garlic and whisk in the grits.
  • Cook while stirring on moderately low heat until tender (~20 mins)
  • Remove pan from heat and stir in cheese, butter and cream. Season with salt and pepper.
     
  • BBQ Shrimp: Crisp pancetta and set aside. Reserve fat.Sear shrimp and set aside
  • Add more butter if necessary and brown onion and garlic
  • Add BBQ sauce and bourbon, and season with tabasco, cajun seasoning and worcestershire sauce to taste
  • Add green onions. Add pancetta and shrimp back in for last 5 mins to reheat shrimp but not dry them out. Season with salt and pepper.
