BBQ Shrimp & Grits
Ingredients
- 1 ½ lbs shrimp
- ½ cup pancetta
- 1 cup green onions, chopped
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 Tbsp bourbon
- ~½ cup BBQ sauce
- tabasco
- Cajun seasoning
- Worcestershire sauce
- 4 cups chicken broth
- 1 garlic clove, minced
- 1 cup old fashioned grits
- 4 oz sharp cheddar, grated
- 2 Tbsp butter
- 2 Tbsp cream
- salt and pepper
Recipe
- Grits: Bring broth to boil
- Add garlic and whisk in the grits.
- Cook while stirring on moderately low heat until tender (~20 mins)
- Remove pan from heat and stir in cheese, butter and cream. Season with salt and pepper.
- BBQ Shrimp: Crisp pancetta and set aside. Reserve fat.Sear shrimp and set aside
- Add more butter if necessary and brown onion and garlic
- Add BBQ sauce and bourbon, and season with tabasco, cajun seasoning and worcestershire sauce to taste
- Add green onions. Add pancetta and shrimp back in for last 5 mins to reheat shrimp but not dry them out. Season with salt and pepper.
