Ingredients

  • 1 kg white flour
  • 1½ Tbsp salt
  • 21 g active dry yeast
  • 2 tsp sugar
  • 600 ml milk
  • 140 g butter
  • 1 egg, beaten
  • 3 Tbsp cream

Recipe

  • Mix flour and salt
  • Melt the butter with milk on stove until lukewarm
  • Mix the yeast, sugar and water in a cup and let rise
  • Add milk/butter and yeast to flour, mix and knead until dough is elastic and smooth
  • Leave in a bowl covered with a moist towel until risen to twice its original size (~1 hr at 70F)
  • Form two long rolls and braid (see diagram below). Put on a cream wash and let rest for another 30 minutes.
  • Put on a wash of egg yolk, preheat oven to 390F, and bake for 45-60 minutes until golden brown.
