Züpfe
Ingredients
- 1 kg white flour
- 1½ Tbsp salt
- 21 g active dry yeast
- 2 tsp sugar
- 600 ml milk
- 140 g butter
- 1 egg, beaten
- 3 Tbsp cream
Recipe
- Mix flour and salt
- Melt the butter with milk on stove until lukewarm
- Mix the yeast, sugar and water in a cup and let rise
- Add milk/butter and yeast to flour, mix and knead until dough is elastic and smooth
- Leave in a bowl covered with a moist towel until risen to twice its original size (~1 hr at 70F)
- Form two long rolls and braid (see diagram below). Put on a cream wash and let rest for another 30 minutes.
- Put on a wash of egg yolk, preheat oven to 390F, and bake for 45-60 minutes until golden brown.
